Paleo Date Bars Soak 3 cups pitted dates for a minimum of 1 hour. Drain and then process in a food processor. Spoon processed dates into a mixing bowl. Mix in: 1/2 tbsp cocoa powder 1/2 cup coconut flakes. Press mixture into 8x8 pan. Cut into pieces, sprinkle top with additional coconut and cocoa nibs. Freeze. Once frozen store in a container and keep in freezer to preserve and hold shape.
