Paleo Cinnamon Raisin Bread Preheat oven to 300. Grease a loaf pan with coconut oil. In a bowl combine: 1/4 cup coconut flour 3/4 cup tapioca flour 1/2 tsp sea salt 1 tsp baking soda 3 tbsp raisins In a second bowl whisk together: 4 eggs 2 1/2 tsp Apple cider vinegar 1/4 cup coconut milk 2 tbsp honey Mix bowls together very well. Sprinkle 2 tsp cinnamon on top and mix around very lightly for only a few stirs. Too much or vigorous stirring will cause your batter to turn brown. Pour batter into greased loaf pan and bake at 300 for 40-50 minutes. If you have a dark loaf pan your time will be less.
