Mango Salsa

Mango Salsa

4 medium mangos chopped
1/2 red bell pepper chopped
2 tbsp diced red onion
1 tbsp chopped fresh cilantro (omit if you don't like cilantro)
1 tbsp lime juice
1/2 tbsp lemon juice
Toss in bowl, cover and refridgerate until needed.
Serve over fish or chicken.  
Notes: a mango should be soft to touch not mushy and not hard. Mangos that are too hard are not yet ripe, over ripe mangos are mushy and the skin is usually starting to lose its firmness.
