Paleo Thai Beef Stew with Naan

Paleo Beef Thai Stew
In a slow cooker on low combine:
1 can coconut milk
1 can tomato paste
1/4 tsp paprika
3 tsp medium yellow curry powder
1/2 red onion chopped
2 cloves minced garlic
2 cups chopped carrots
2 lbs frozen stewing beef
Cook for 8 hours on low.

Sea salt to taste preference or salt in your dish after.
Option: if potatoes work for you and your shade of paleo, add in one cup of chopped potatoes. 

Paleo Naan
Preheat oven to 375
In a bowl mix around:
1/2 cup almond flour
1/4 cup tapioca flour
3 tbsp coconut flour
Then mix in:
1/2 cup almond milk
2 eggs

Scoop onto parchment paper lined baking tray. Flatten with back of spoon. Makes 4. You can double this to make more. Bake 15 minutes then flip and bake for another 15.
